Ridge Gourd/Heerekayi Palya is very easy to prepare and goes well with hot rice.
Here goes the recipe of this palya/sabzi .....
Ridge Gourd: 2 nos. (peeled, chopped in to fine pieces)
Mustard seeds: 1 tsp
Urad dal: 1 tsp
Curry Leaves: 1 Strand
Turmeric: 1 tsp
Grated Coconut: 1 tbsp
Salt to taste
Green chillies: 1 chopped lengthwise
1. Heat oil in the frying pan, add mustard seeds when it starts spluttering add urad dal, curry leaves and turmeric. Fry well till urad dal turns golden.
2. Add ridge gourd pieces and mix well. Pour in little water, close the lid,cook till ridge gourd turns soft.
3. Add Grated coconut and Salt. Garnish with coriander leaves.
