         Seemebadnekai Palya/ chayote squash sabzi

Seemebadnekai Palya/ chayote squash sabzi is very easy to prepare and tasty too. You can serve this with chapathi and also rice. Adding Kasuri Methi gives a good aroma and different taste too.

Ingredients:

Seemebadnekai / chayote squash - 2 big sized chopped to small pieces

Green Chillies - 3 cut lengthwise

Coriander leaves - a few chopped finely

Oil - 2 tbsp

Mustard seeds - 1 tsp

Blackgram dal - 1 tsp

Turmeric powder - 1 tsp

Asafoetida powder - 1/2 tsp

Cumin seeds - 3/4 tsp

Fresh grated coconut - A handful

Lemon juice - 1 tsp

Kasuri Methi - 2 tbsp

Grated Coconut - 1/2 cup

Procedure:

1. Peel the skin of Seemebadnekai / chayote squash, but don't throw away the skin. You can prepare a tasty Chutney with that.

2. Take Kadai, Heat Oil. Add Mustard seeds when it starts spluttering add jeera, urdal dal green chillies. Fry for few seconds. Add chopped Seemebadnekai / chayote squash, salt to taste, turmeric and little water, cover with a lid and cook till the veggie is soft.

3. Finally add grated coconut and Kasuri methi.

Serve with Chapati or mix with rice.
