We have posted recipes for Pudina Pulav, Pudina Bhath, try this delightful Mint Rice/Pudina Chitranna. Pudina Rice is good for lunch box too.
Ingredients:
Rice: 1 cup
Water: 2 cups
Salt to taste
For Grinding:
Pudina Leaves/Mint Leaves: 2 cups Onion: 1 chopped Ginger: 1 inch Garlic: 2 pods (optional) Green chillies: 2 Oil: 1 tsp
For Seasoning:
Onion: 1 Cut lengthwise Tomato: 1 chopped finely Oil: 2 tbsp Urad dal: 1 tsp Bengal gram dal: 1 tsp Jeera: 1 tsp Peas: A handful or 1 cup Curry Leaves: 1 strand Chakke/Cinnamon/dalchin - 1 piece Green chillies: 1 cut lengthwise
For Garnish:
Grated Coconut: 1 tbsp Coriander Leaves: A handful of Finely chopped
Procedure:
1.Cook rice in your pressure cooker with 2 cups of water. Double the rice
quantity. Let go with 3 whistles and switch off. Let it cool.
2. Fry the ingredients for grinding with 1 tsp oil. Grind to make a fine paste.
3. Heat the oil in the kadai, add jeera, chakke, curry leaves, urad dal, bengal gram dal, onion and tomato. Fry till onion turns soft. Add Peas and grinded paste from step 2. Fry again for a 3 - 4 mins. Add Salt. Mix well.
4. Add cooked rice from step 2 mix well with the paste. Garnish with coconut and coriander leaves.
Pudina Chitranna is ready to eat and you also pack this for lunch box too.
