Ring Masala/Fryums Masala is an evening snack or chaat item with the crispy rings placed on the plate, filled with grated carrots and onions and then relished with sweet and green chutneys as topping.

Ingredients: 250 gms Fryums/Tomato rings/Yellow botis 2 medium sized onions, finely chopped 1 cup grated carrot 1/2 cup chopped tomatoes 1/2 cup finely chopped coriander salt to taste 1/4 tsp chilli powder 1/4 tsp cumin seeds (jeera) powder 1/4 tsp coriander (dhania) powder 1/2 cup Sweet Chutney 1/2 cup Green Chutney 1/4 cup chopped peanuts available in bakeries(optional) 1 cup sev 1 cup puffed rice

For the sweet/meeta chutney: 4 dates (khajur) a small sized ball of tamarind 1/4 tsp cumin seeds (jeera) 1 lump of jaggery
For the green chutney: 2 green chillies a few mint leaves (pudina) few coriander (dhania) leaves
Procedure For the sweet/meeta chutney:
1. Soak the above ingredients in hot water for about 1/2 hour. 2. Grind to a smooth paste adding very little water. 3. Strain the above chutney and bring to a boil. 4. Cool and store when required.
For the green chutney:
1. Grind all the ingredients for the green chutney with a little water to a smooth paste. 2. Use as required.
For the ring masala:
1. Place the 8 to 10 rings on a plate.

2. Top them with a little grated carrot. 3. Then, top the rings with the chopped onion.

4. Take a teaspoon and depending on individual taste add a little sweet chutney & green chutney.


5. Mix the salt,jeera powder,dhania powder & chilli powder together. Sprinkle on each ring. 6. Sprinkle peanuts, puffed rice and sev as above.

7. Serve immediately garnished with freshly chopped coriander leaves.
