Eggless sponge cake is very easy to prepare and yummy too. It requires very few ingredients curds, oil and All purpose flour.

Ingredients:
All Purpose Flour - 1 and 1/2 cup
Curds - 1 cup
Sugar - 3/4 cup
Baking powder - 1 1/4 tsp
Baking soda - 1/2 tsp
Oil - 1/2 cup
Vanilla Essence - 1 tsp
Procedure:
1. Preheat oven to 200C. Grease your cake tin. Sift All purpose flour. Keep it aside.
2. In
a mixing bowl,beat together sugar and curds till creamy. Mix in baking
powder,baking soda and beat well. Let it rest
for 2 -3 minutes or till bubbles start to appear on top.
3. Add in the oil and vanilla essence. Add the flour mix and beat till you get a smooth batter. Beat in one direction. Pour the batter into the prepared tin.
4. Bake at 200C for 5 minutes and 170C for 30-35 minutes or until a toothpick inserted in the center comes out clean.
5. Cool the cake in the tin for 5 minutes and then turn onto a wire rack for further cooling.
Cool the cake completely before cutting for best results.
